MALAI KOFTA

very tasty  but time consuming reciepe.this reciepe is from the books of tarladalal.good with roti, jeera rice ,pulav.........

Ingredients

Koftas----
1 1/2 cups boiled and mashed potatoes
1/4 cup
 grated paneer (cottage cheese)
green chillies, finely chopped
1/2
 " piece of ginger (adrak), chopped
salt to taste
2 tsp
 chilli powder
1/4 cup
 cornflour
20 pcs
 raisins (kismis)
2 tbsp
 chopped coriander (dhania) leaves
oil for deep frying

Gravy----


3 tbsp oil
1/2 " piece of ginger (adrak), chopped
2onion 
3-4 tomato
garlic 3-4 (opt)
1 tsp
 salt
1 tsp
 coriander (dhania) powder
1 tsp
 chilli powder
1 tsp
 dried mango powder (amchur)
1 tsp
 chaat masala
1 tsp sugar
3/4 cup grated mava (khoya) or 3/4 cup milk
( mix mawa  in ¾ Tcup Milk )
1 1/2 cups
 water
2 tbsp
 cream
2 tbsp
 chopped coriander (dhania) leaves

Garnish__
chopped coriander (dhania) leaves
cream
Method 
Kofta

1.    Mix boiled mashed pototoes with paneer,green chilli,ginger,salt,chaat masala,red chilli powder,cornflour,coriander leaves.
2.    Check the seasoning and then divide them into small balls ( approximately 20 pieces ).
3.    Stuff raisins in each and then deep fry in hot oil till golden brown.
4.    Drain well on a tissue and keep aside.
Gravy

1.    Heat oil in a kadhai.grind ginger ,1 green chilli , onion ,tomato ,garlic to a paste.
     fry till oil seperates.
f..    Add all the indian spices to it and also add salt to it.
5.    Add the mawa mixture and mix well.
6.    add water to it as req.
7.    Simmer the gravy well and then check the seasoning.
     add the koftas before serving.
8.   garnish  with malai and coriander leaves .
