BAINGAN BHARTA

NEEDED:

1 big  brinjal ( 1/2 - 3/4 KG) / baingan
1 big onion - finely chopped
giner - small piece - finely chopped or grated
1 big tomato - chopped
green chilly- chopped
garam masala
hing
haldi
salt
corriander
oil, 1/2 tsp jeera, 1/2 tsp mustard

METHOD:

  • grease a brinjal with little oil & cook  over an open flame till it is soft. ( skin will become black)
  • cool & peel the skin .
  • mash the pulp using ur hands  or masher & keep aside.
  • temper mustard & jeera in 3 tsp oil  &; add the onion. saute for few min.
  • then add green chilly , ginger & the tomato. add haldi , hing & cook for few min .
  • now add the mashed brinjal , salt , garam masala . mix well .
  • garnish with corriander & serve .
